Ingredients
1 medium cauliflower
500 ml of milk
2 tablespoons of butter
2 tablespoons wheat flour
1 cup of grated cheese (you can use mozzarella, parmesan or other cheese of your choice)
Salt and pepper to taste
Nutmeg (optional) for a special touch
Breadcrumbs (optional) for gratin
Directions
- Preheat the oven to 200°C.
- Separate the cauliflower into small bouquets and wash them well.
- In a large pot, bring water to a boil and add a pinch of salt.
- Cook the cauliflower bunches in the boiling water for about 5 minutes, until they are slightly soft but still firm.
- Drain the water and reserve the cooked cauliflower.
- In another pan, melt the butter over medium heat.
- Then add the wheat flour and stir well until you form a smooth paste (roux).
- Cook for about 1 minute, stirring constantly.
- Reduce the heat to medium-low and add the milk gradually, stirring constantly to prevent lumps from forming.
- Continue cooking until the sauce thickens and becomes creamy.
- Add half of the grated cheese to the white sauce and stir until the cheese is completely melted.
- Season with salt, pepper and nutmeg, if using.
- In a refractory dish, place the cooked cauliflower bouquets and pour the white sauce with cheese on top, ensuring that they are well covered.
- If desired, sprinkle breadcrumbs and the rest of the grated cheese over the cauliflower.
- Place in the preheated oven and bake for about 20 to 25 minutes or until the gratinated cauliflower is golden and bubbly.
- Remove from the oven and serve the gratinated cauliflower still hot.
