Here is a wonderful, simple, easy and basic recipe to prepare your Cauliflower Gratin:

Ingredients

  • 1 medium cauliflower

  • 500 ml of milk

  • 2 tablespoons of butter

  • 2 tablespoons wheat flour

  • 1 cup of grated cheese (you can use mozzarella, parmesan or other cheese of your choice)

  • Salt and pepper to taste

  • Nutmeg (optional) for a special touch

  • Breadcrumbs (optional) for gratin

Directions

  • Preheat the oven to 200°C.
  • Separate the cauliflower into small bouquets and wash them well.
  • In a large pot, bring water to a boil and add a pinch of salt.
  • Cook the cauliflower bunches in the boiling water for about 5 minutes, until they are slightly soft but still firm.
  • Drain the water and reserve the cooked cauliflower.
  • In another pan, melt the butter over medium heat.
  • Then add the wheat flour and stir well until you form a smooth paste (roux).
  • Cook for about 1 minute, stirring constantly.
  • Reduce the heat to medium-low and add the milk gradually, stirring constantly to prevent lumps from forming.
  • Continue cooking until the sauce thickens and becomes creamy.
  • Add half of the grated cheese to the white sauce and stir until the cheese is completely melted.
  • Season with salt, pepper and nutmeg, if using.
  • In a refractory dish, place the cooked cauliflower bouquets and pour the white sauce with cheese on top, ensuring that they are well covered.
  • If desired, sprinkle breadcrumbs and the rest of the grated cheese over the cauliflower.
  • Place in the preheated oven and bake for about 20 to 25 minutes or until the gratinated cauliflower is golden and bubbly.
  • Remove from the oven and serve the gratinated cauliflower still hot.
