Ingredients

  • 3 eggs

  • 2 cups of sugar

  • 2 cups of cornmeal

  • 1 cup wheat flour

  • 1 cup of milk

  • 1/2 cup vegetable oil

  • 1 tablespoon powdered yeast

  • 1 tsp fennel (optional, for extra flavor)

  • pinch of salt

Directions

  • Preheat the oven to 180°C and grease a cake tin with butter or oil and sprinkle with cornmeal or flour.
  • In a large bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, fennel (if using), and pinch of salt.
  • Stir well to combine the dry ingredients.
  • In another bowl, beat the eggs with a fork or a fouet until well blended.
  • Add the milk and oil to the beaten eggs and mix well.
  • Pour the liquid mixture into the bowl with the dry ingredients and stir gently until you get a homogeneous mass.
  • It’s important not to over mix to ensure the cake is fluffy.
  • Transfer the dough to the greased mold and smooth the surface with a spatula.
  • Place in the preheated oven and bake for approximately 30 to 40 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  • Remove the cake from the oven and let it cool in the tin for a few minutes before unmolding.
  • After unmold, wait to cool completely before cutting and serving.
