Ingredients

  • 500g of black beans

  • 500g pork (short ribs, loin, bacon, pepperoni sausage)

  • 200g of dried meat

  • 200g of paio or Portuguese sausage

  • 1 large chopped onion

  • 4 minced garlic cloves

  • 2 bay leaves

  • Salt to taste

  • Black pepper to taste

  • Enough water to cook the beans

  • Oil or pork lard for sautéing

Directions

  • Start by washing the black beans and soak them in water for about 2 hours. 
    This will help reduce the cooking time.
  • In a pressure cooker, place the drained beans, add enough water to cover the beans and cook over high heat until pressure is reached.
  • After getting pressure, reduce the fire to medium and cook for about 30 minutes.
  • While the beans are cooking, prepare the meat. 
    Cut the pork into pieces and the dried meat into cubes. 
    Boil the dried meat in a separate pan for 15 minutes to remove excess salt.
  • In another pan, heat the oil or pork lard and sauté the onion and garlic until golden.
  • Add the meats (pork, jerky, pepperoni sausage and/or paio) to the stew and fry for a few minutes to brown.
  • Then transfer the braised meats to the already cooked bean pan and mix well.
  • Add bay leaves, salt and pepper to taste.
  • Cook the feijoada for another 30 minutes in the pressure cooker over medium heat.
  • Check seasoning and, if necessary, adjust salt and pepper.
  • Remove bay leaves before serving.
