Ingredients
2 eggplants
1/2 chopped onion
1 chopped tomato
2 tablespoons chives
200g ground beef (ground duckling)
100g of mozzarella
Salt, black pepper and paprika to taste
Directions
- Cut the eggplants in half;
- Remove the seeds and the hoopoe;
- Cut the hoopoe into pieces;
- Transfer the pieces to a container with water and salt and take it to the fridge;
- In a pot of boiling water, add 1 tablespoon of salt;
- Cook the eggplant halves for 10 minutes;
- In a pan, add olive oil;
- Add half a chopped onion;
- Saute for 1 minute;
- Add 3 crushed garlic cloves;
- Add 200g of ground beef;
- Add oregano, black pepper, salt and paprika;
- Add 1 diced tomato;
- Add 2 tablespoons chives;
- Drain the water from the eggplant pulp and add the pieces to the filling;
- Mix;
- Drizzle the eggplant halves with a drizzle of olive oil;
- Fill them with stuffing;
- Add grated mozzarella;
- Add oregano;
- Take to preheated oven at 180 degrees for approximately 20 minutes;
