Curau

Curau is a creamy sweet made with green corn, milk, sugar and cinnamon. It is a typical dessert of Brazilian cuisine, especially from the Northeast region.

Curau is made with green corn grains, which are removed from the cob and blended in a blender with milk. 
The resulting cream is strained to remove the corn fibers. 
The strained liquid is then heated, with sugar and salt, until it thickens.

Ingredients

  • 5 hard ears of corn

  • 1 liter of milk

  • 1 1/2 cups sugar

  • 1 pinch of salt

Directions

  • Remove the kernels from the corn cobs and wash them well.
  • Blend the corn kernels in a blender with the milk until creamy.
  • Strain the cream through a fine sieve, pressing well to extract all the liquid.
  • Place the strained liquid in a pan, add the sugar and salt and cook over medium heat, stirring constantly, until it thickens.
  • Turn off the heat and transfer the curau to a refractory dish.
  • Sprinkle with cinnamon powder to taste and serve hot or cold.
