Ingredients
500 g cassava flour
2 crushed garlic cloves
3 tablespoons of butter or olive oil
1 medium chopped onion
1/2 cup chopped olives
1 chopped red pepper
100 g of chopped bacon
100 g of chopped calabresa sausage
1/2 cup of raisins
1/2 cup chopped walnuts
Salt and pepper to taste
Directions
- In a pan, heat the butter or olive oil and sauté the onion and garlic until soft.
- Add the bacon and pepperoni and fry until golden.
- Add the cassava flour and stir well so that it absorbs all the fat.
- Add the olives, bell pepper, raisins, nuts, salt and pepper to taste.
- Cook for a few more minutes, stirring constantly, until the farofa is very dry.
Notes
- For a wetter farofa, add a little chicken or vegetable broth.
- You can add other ingredients to the farofa, such as grated carrots, chopped boiled egg, chestnuts or peanuts.
