Make your Cornmeal Bread using the ingredients below and following the step-by-step preparation method.

Ingredients

  • 1 cup (2 sticks) unsalted butter at room temperature

  • 1 cup of sugar

  • 3 large eggs

  • 1 teaspoon vanilla extract

  • 2 cups unbleached wheat flour

  • 1 cup of cornmeal

  • 1 teaspoon powdered yeast

  • 1/2 teaspoon bicarbonate of soda

  • 1/2 teaspoon of salt

Directions

  • Preheat oven to 350 degrees F (175 degrees C). 
    Grease and flour a 9 x 5-inch cake pan.
  • In a large bowl, beat butter and sugar until light and fluffy. 
    Add the eggs one at a time, beating well after each addition. 
    Add vanilla.
  • In a separate bowl, mix the flour, cornmeal, baking powder, baking soda and salt. 
    Add to wet ingredients and mix until combined.
  • Pour the batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool in pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For a fluffier bread, knead the dough longer.
  • For a more flavorful bagel, add 1/2 cup of chocolate chips or cranberries to the dough.
  • For healthier bread, use unsalted butter and whole wheat flour.
