Ingredients
- 1 cup (2 sticks) unsalted butter at room temperature 
- 1 cup of sugar 
- 3 large eggs 
- 1 teaspoon vanilla extract 
- 2 cups unbleached wheat flour 
- 1 cup of cornmeal 
- 1 teaspoon powdered yeast 
- 1/2 teaspoon bicarbonate of soda 
- 1/2 teaspoon of salt 
Directions
- Preheat oven to 350 degrees F (175 degrees C). 
 Grease and flour a 9 x 5-inch cake pan.
- In a large bowl, beat butter and sugar until light and fluffy. 
 Add the eggs one at a time, beating well after each addition.
 Add vanilla.
- In a separate bowl, mix the flour, cornmeal, baking powder, baking soda and salt. 
 Add to wet ingredients and mix until combined.
- Pour the batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For a fluffier bread, knead the dough longer.
- For a more flavorful bagel, add 1/2 cup of chocolate chips or cranberries to the dough.
