For your Blender Corn Cake to be perfect, you will need the following ingredients:

Ingredients

  • 1 can of green corn

  • 1 can of milk (corn can measurement)

  • 1 can of sugar (corn can measurement)

  • 1 can of cornmeal (measured from the can of corn)

  • 3 eggs

  • 1 tablespoon of baking powder

Directions

  • Drain the corn and use the can itself for measurements.
  • Grease and flour a cake pan with a hole.
  • Preheat the oven to 180°C.
  • Place the corn (already drained), milk, sugar, cornmeal, oil, eggs in the blender and blend well until the corn is finely ground.
  • Add the yeast and mix gently.
  • Pour the batter into the prepared pan and bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely before unmolding.

Notes

  • For a creamier cake, add 1/2 can of condensed milk.
  • For a butterier cake, add 1/2 cup of melted butter.
  • For a more colorful cake, add 1/2 cup of grated coconut or 1/4 cup of chocolate sprinkles.
