This salad is a great option for a light lunch or as a starter in a more elaborate meal.

Ingredients

  • 500g desalted and shredded codfish

  • 1 chopped red onion

  • 2 minced garlic cloves

  • 2 chopped tomatoes

  • 1 chopped green pepper

  • 1 chopped red pepper

  • 1/2 cup chopped green olives

  • 1/2 cup olive oil

  • 1 lemon juice

  • Salt and pepper to taste

  • chopped parsley to taste

Directions

  • Start by cooking the cod in boiling water for about 10 minutes, until it is soft. 
    Run and book.
  • In a large bowl, combine the onion, garlic, tomatoes, peppers and olives.
  • Add the cod to the vegetable mixture and mix well.
  • In a separate bowl, mix olive oil, lemon juice, salt and pepper. 
    Pour the mixture over the cod salad and mix again.
  • Sprinkle the chopped parsley over the salad and serve cold.
