Ingredients

  • 2 cups of sugar

  • 2 cups desiccated coconut (fresh or desiccated)

  • 1 teaspoon vanilla essence

  • 1 cup of water

  • 1/4 teaspoon of salt

Directions

  • In a large saucepan, combine the sugar and water and place over medium-high heat, stirring constantly until the sugar is completely dissolved.
  • Add the shredded coconut and salt to the sugar and water mixture and continue stirring. 
    Reduce the heat to medium and cook the mixture for about 20-25 minutes, stirring occasionally to prevent it from sticking to the bottom of the pan.
  • When the mixture is thick and starts to come away from the pan, add the vanilla essence and mix well.
  • Pour the mixture into a baking sheet lined with parchment paper and let it cool for about 10-15 minutes.
  • After the mixture has cooled, use a sharp knife to cut it into small pieces. 
    Wrap each piece in parchment paper and let cool completely before serving.

Notes

  • This recipe yields about 25-30 coconut candies, depending on how big you choose to cut them. Enjoy!
