Christmas rice is a traditional dish in Brazilian cuisine, served mainly during the end-of-year festivities. It is a colorful and tasty rice dish that combines different ingredients, such as white rice, dried fruits, nuts and vegetables.

Christmas rice is usually white rice, cooked in salted water. Color and flavor are added by ingredients such as raisins, almonds, chestnuts, corn, peas, carrots, peppers and parsley.

Ingredients

  • 1 kilo of white rice

  • 2 tablespoons of oil

  • 1 chopped onion

  • 2 cloves of minced garlic

  • 2 chopped carrots

  • 1 chopped green pepper

  • 1/2 cup of sweet corn

  • 1/2 cup cooked peas

  • 100 grams of chopped almonds

  • 100 grams of black raisins

  • Salt to taste

Directions

  • In a pan, heat the oil and sauté the onion and garlic until soft.
  • Add the carrots, bell pepper, corn, peas, almonds and raisins and sauté for a few more minutes.
  • Add the rice and mix well.
  • Add the water and salt and bring to a boil over high heat.
  • When the water boils, lower the heat and cover the pan.
  • Cook for about 20 minutes, or until the rice is tender and the water has evaporated.
  • Remove from heat and serve immediately.
