4 eggs, separated
1 cup (240 ml) of milk
1 cup (200g) sugar
2 tablespoons cocoa powder
1 tablespoon vanilla essence
1 cup (240 ml) whipping cream, chilled

- In a medium saucepan, combine the whole eggs, milk, sugar, cocoa powder and vanilla extract.
- Bring the mixture to medium heat, stirring constantly, until it thickens and forms a creamy mixture.Â
Remove from heat and let cool. - Beat the egg whites until they are stiff and form peaks.
- In another container, beat the fresh cream until it forms peaks.
- Add half of the egg whites to the chocolate mixture and mix gently.
- Add the rest of the whites and mix again.
- Add the fresh cream mixture and mix gently until the mousse is smooth.
- Spoon the mousse into glasses or a large container and refrigerate for at least 2 hours to set.
- When ready to serve, sprinkle grated chocolate over the mousse.
