Ingredients
2 cooked and shredded chicken breasts
1 large grated carrot
1 chopped green apple
1 can of drained peas
1 can of drained corn
1/2 cup raisins
1/2 cup chopped green olives
1/2 cup sour cream
1/2 cup mayonnaise
1 lemon juice
Salt and pepper to taste
Mashed Potatoes (optional, for garnish)
Directions
- In a large bowl, mix the shredded chicken, grated carrots, chopped apple, green corn, peas, raisins and olives.
- In another container, make a sauce by mixing the mayonnaise, cream and lemon juice.
- Season with salt and pepper to taste.
- Pour the sauce over the chicken and vegetable mixture and toss until all the ingredients are covered in the sauce.
- Take the sausage to the fridge for at least 1 hour so that the flavors mix and the salad stays fresher.
- When serving, you can decorate the sausage with straw potatoes on top.
- Serve chilled and enjoy!
