This recipe is a perfect combination of flavors and textures, ideal for serving as a main dish at lunch, dinner or even special events.

Ingredients

  • 1 and 1/2 cups of wheat flour

  • 1/2 cup cold butter, cut into cubes

  • 1 pinch of salt

  • 3 to 4 tablespoons of ice water

  • 1 cooked and shredded chicken breast

  • 1 medium onion, chopped

  • 2 garlic cloves, chopped

  • 1 cup fresh spinach, chopped (optional)

  • 4 eggs

  • 1 cup of cream

  • 1/2 cup of milk

  • 1 cup Gruyère cheese or cheese of your choice, grated

  • Salt and pepper to taste

  • Grated nutmeg to taste

Directions

  • In a bowl, mix the wheat flour and salt.
  • Add the cold butter and mix until you have a crumb-like texture.
  • Add the ice water, one tablespoon at a time, until a homogeneous dough forms.
  • Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  • In a pan, sauté the onion and garlic until golden.
  • Add the shredded chicken and spinach, cooking for a few more minutes.
  • In a bowl, beat the eggs and add the cream, milk, grated cheese, salt, pepper and nutmeg.
  • Mix well.
  • Add the chicken mixture to the bowl with the eggs and mix until smooth.
  • Preheat the oven to 180°C.
  • Roll out the dough and line a quiche mold.
  • Pour the filling over the dough.
  • Bake in the preheated oven for about 30-40 minutes, or until the quiche is golden brown and firm to the touch.
