Ingredients
1 and 1/2 cups of wheat flour
1/2 cup cold butter, cut into cubes
1 pinch of salt
3 to 4 tablespoons of ice water
1 cooked and shredded chicken breast
1 medium onion, chopped
2 garlic cloves, chopped
1 cup fresh spinach, chopped (optional)
4 eggs
1 cup of cream
1/2 cup of milk
1 cup Gruyère cheese or cheese of your choice, grated
Salt and pepper to taste
Grated nutmeg to taste
Directions
- In a bowl, mix the wheat flour and salt.
- Add the cold butter and mix until you have a crumb-like texture.
- Add the ice water, one tablespoon at a time, until a homogeneous dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- In a pan, sauté the onion and garlic until golden.
- Add the shredded chicken and spinach, cooking for a few more minutes.
- In a bowl, beat the eggs and add the cream, milk, grated cheese, salt, pepper and nutmeg.
- Mix well.
- Add the chicken mixture to the bowl with the eggs and mix until smooth.
- Preheat the oven to 180°C.
- Roll out the dough and line a quiche mold.
- Pour the filling over the dough.
- Bake in the preheated oven for about 30-40 minutes, or until the quiche is golden brown and firm to the touch.
