For your Chicken Pie to be delicious, use the ingredients mentioned below and follow the instructions in the preparation method.

Ingredients

  • 2 cups of wheat flour

  • 1 egg

  • 1 cup cubed chilled butter

  • 2 tablespoons of ice water

  • 1 cooked and shredded chicken breast

  • 1 chopped tomato

  • 1 small chopped onion

  • 2 minced garlic cloves

  • 1/2 cup green corn (optional)

  • 1/2 cup chopped green olives (optional)

  • Salt and pepper to taste

  • 1 tablespoon vegetable oil

Directions

  • In a large bowl, mix the wheat flour with the cold butter until it forms a crumb.
  • Add the egg and ice water and mix until a homogeneous mass is formed.
  • Wrap the dough in plastic wrap and place in the fridge for 30 minutes.
  • While the dough is resting in the fridge, heat the oil in a pan and sauté the onion and garlic until golden.
  • Add the tomato and sauté for a few more minutes.
  • Then add the shredded chicken, corn and olives (if using).
  • Season with salt and pepper to taste and cook for a few more minutes.
  • Book the stuffing.
  • Preheat the oven to 180°C.
  • Remove the dough from the refrigerator and divide it into two parts: one for the base of the pies and another for the lids.
  • Open the dough with a rolling pin on a floured surface and cut circles to line the pie molds.
  • Place a portion of the stuffing in each mold.
  • Roll out the second part of the dough and cut circles to be used as pie covers.
  • Place the lids over the filling and press the edges with a fork to seal.
  • Place the pies on a baking sheet and place in the preheated oven for about 25-30 minutes, or until golden brown.
  • Remove the pies from the oven and let them cool slightly before unmolding and serving.
