To make your Chicken Fricassê, use the ingredients below and follow the step-by-step preparation instructions.

Ingredients

  • 500g boneless, skinless chicken breast, cut into cubes

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 1 tablespoon of butter

  • 1 can of peas, drained

  • 1 can corn, drained

  • 1/2 cup of water

  • 1/2 cup of milk

  • 1/2 cup cream cheese

  • 1 cup of tomato sauce

  • 1/2 cup shredded mozzarella cheese

  • Salt and pepper to taste

  • Mashed Potatoes (to serve)

Directions

  • Preheat the oven to 200°C.
  • In a large pan, heat the butter over medium heat. 
    Add the onion and garlic, sautéing until soft and lightly golden.
  • Add the diced chicken to the pan and season with salt and pepper to taste. 
    Cook until the chicken is browned on the outside.
  • Add the green corn, peas, tomato sauce and water. 
    Mix well, reduce heat to medium-low and simmer for about 10 minutes.
  • Then add the milk and cream cheese to the pan, stirring until well incorporated into the sauce. 
    Cook for another 5 minutes, stirring occasionally.
  • Transfer the fricassê ​​to a refractory or roasting pan. 
    Cover with grated mozzarella cheese.
  • Bake in preheated oven for approximately 15 to 20 minutes, or until cheese is melted and lightly browned.
  • Remove from the oven and serve the chicken fricassê ​​hot, accompanied by straw potatoes.
