Ingredients
500g boneless, skinless chicken breast, cut into cubes
1 medium onion, chopped
2 garlic cloves, minced
1 tablespoon of butter
1 can of peas, drained
1 can corn, drained
1/2 cup of water
1/2 cup of milk
1/2 cup cream cheese
1 cup of tomato sauce
1/2 cup shredded mozzarella cheese
Salt and pepper to taste
Mashed Potatoes (to serve)
Directions
- Preheat the oven to 200°C.
- In a large pan, heat the butter over medium heat.
Add the onion and garlic, sautéing until soft and lightly golden. - Add the diced chicken to the pan and season with salt and pepper to taste.
Cook until the chicken is browned on the outside. - Add the green corn, peas, tomato sauce and water.
Mix well, reduce heat to medium-low and simmer for about 10 minutes. - Then add the milk and cream cheese to the pan, stirring until well incorporated into the sauce.
Cook for another 5 minutes, stirring occasionally. - Transfer the fricassê to a refractory or roasting pan.
Cover with grated mozzarella cheese. - Bake in preheated oven for approximately 15 to 20 minutes, or until cheese is melted and lightly browned.
- Remove from the oven and serve the chicken fricassê hot, accompanied by straw potatoes.
