Fajitas are a Mexican dish consisting of strips of meat, usually marinated and grilled, served with wheat tortillas and a choice of filling options, such as grilled vegetables, guacamole, sour cream, grated cheese and salsa.

Ingredients

  • 1/2 cup lemon juice

  • 2 tablespoons of olive oil

  • 2 tablespoons of soy sauce

  • 1 tablespoon cumin powder

  • 1 tablespoon smoked paprika

  • 1 teaspoon cayenne pepper

  • Salt and pepper to taste

  • 1/2 red onion, sliced

  • 1/2 red bell pepper, sliced

  • 1/2 yellow bell pepper, sliced

  • 1 clove of minced garlic

  • 500g chicken breast cut into strips

  • 6 wheat tortillas

  • Grated cheese

  • Salsa

  • Sour cream

  • Guacamole

Directions

  • In a small bowl, combine lemon juice, olive oil, soy sauce, cumin, paprika, and cayenne pepper.
  • Season with salt and pepper to taste.
  • In a large bowl, place the chicken and add the marinade.
  • Mix well so that the chicken is well coated.
  • Let it rest for at least 30 minutes or up to an hour.
  • Preheat a grill or skillet over medium-high heat.
  • Add chicken and cook for about 5-7 minutes on each side, until cooked through and golden brown.
  • While the chicken is cooking, heat the tortillas in a skillet over medium heat for about 30 seconds on each side.
  • In a medium saucepan, heat a little olive oil over medium heat.
  • Add the onion, bell pepper and garlic and cook for about 5 minutes, until soft.
  • When the chicken is cooked, add it to the pan with the vegetables and mix well.
  • Arrange the chicken and vegetable mixture on each tortilla, add grated cheese and other ingredients of your choice, and roll up like a tortilla.
  • Is ready!
