For your Chicken Curry, use the ingredients from the list below and follow the instructions for preparation.

Ingredients

  • 1 kg diced chicken breast

  • 2 tablespoons of oil

  • 1 chopped onion

  • 4 minced garlic cloves

  • 1 tablespoon grated ginger

  • 1 tablespoon curry powder

  • 1/2 teaspoon cumin powder

  • 1/4 teaspoon grated nutmeg

  • 1/4 teaspoon cayenne pepper (optional)

  • 1 cup coconut milk

  • 1 cup of water

  • Salt to taste

  • Chopped coriander to garnish

Directions

  • Heat the oil in a large pan over medium heat.
  • Add the onion, garlic and ginger and sauté until soft.
  • Add the curry powder, cumin, nutmeg and cayenne pepper (if using) and stir well.
  • Add the chicken and mix well so the chicken is completely coated with the spice mixture.
  • Add coconut milk and water and mix well.
  • Let it boil.
  • Lower the heat and cook over low heat, with the pan half-covered, for about 20 minutes or until the chicken is cooked through and the sauce has thickened.
  • Season with salt to taste and serve immediately, sprinkling chopped coriander to decorate.
