Ingredients
1 kg diced chicken breast
2 tablespoons of oil
1 chopped onion
4 minced garlic cloves
1 tablespoon grated ginger
1 tablespoon curry powder
1/2 teaspoon cumin powder
1/4 teaspoon grated nutmeg
1/4 teaspoon cayenne pepper (optional)
1 cup coconut milk
1 cup of water
Salt to taste
Chopped coriander to garnish
Directions
- Heat the oil in a large pan over medium heat.
- Add the onion, garlic and ginger and sauté until soft.
- Add the curry powder, cumin, nutmeg and cayenne pepper (if using) and stir well.
- Add the chicken and mix well so the chicken is completely coated with the spice mixture.
- Add coconut milk and water and mix well.
- Let it boil.
- Lower the heat and cook over low heat, with the pan half-covered, for about 20 minutes or until the chicken is cooked through and the sauce has thickened.
- Season with salt to taste and serve immediately, sprinkling chopped coriander to decorate.
