Ingredients
500g diced chicken breast
2 tablespoons of vegetable oil
2 minced garlic cloves
1 medium onion cut into cubes
1 green pepper cut into cubes
1 red pepper cut into cubes
1 cup broccoli in small bunches
1 medium carrot cut into cubes
1/2 cup soy sauce (shoyu)
2 tablespoons of ketchup
2 tablespoons of oyster sauce
1 tablespoon cornstarch dissolved in 1/4 cup water
Salt and pepper to taste
Directions
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the diced chicken and season with salt and pepper.
- Sauté until the chicken is cooked through and lightly browned.
- Remove chicken from skillet and set aside.
- In the same skillet, add the chopped onion and garlic.
- Sauté for a few minutes until soft and lightly golden.
- Add the peppers, carrots and broccoli to the skillet.
- Saute for about 5 minutes, until the vegetables are soft but still crunchy.
- Meanwhile, in a small bowl, combine soy sauce, oyster sauce and ketchup.
- Pour this mixture over the vegetables in the skillet and stir well.
- Return the chicken to the skillet and toss with the vegetables and sauce.
- Then add cornstarch diluted in water to thicken the sauce.
- Cook for another 2-3 minutes, stirring constantly, until the sauce is thick and glossy.
- Remove from the heat and serve the Chess Chicken hot with white rice or noodles.
