Ingredients

  • 500g diced chicken breast

  • 2 tablespoons of vegetable oil

  • 2 minced garlic cloves

  • 1 medium onion cut into cubes

  • 1 green pepper cut into cubes

  • 1 red pepper cut into cubes

  • 1 cup broccoli in small bunches

  • 1 medium carrot cut into cubes

  • 1/2 cup soy sauce (shoyu)

  • 2 tablespoons of ketchup

  • 2 tablespoons of oyster sauce

  • 1 tablespoon cornstarch dissolved in 1/4 cup water

  • Salt and pepper to taste

Directions

  • In a large skillet or wok, heat the vegetable oil over medium-high heat.
  • Add the diced chicken and season with salt and pepper.
  • Sauté until the chicken is cooked through and lightly browned.
  • Remove chicken from skillet and set aside.
  • In the same skillet, add the chopped onion and garlic.
  • Sauté for a few minutes until soft and lightly golden.
  • Add the peppers, carrots and broccoli to the skillet.
  • Saute for about 5 minutes, until the vegetables are soft but still crunchy.
  • Meanwhile, in a small bowl, combine soy sauce, oyster sauce and ketchup.
  • Pour this mixture over the vegetables in the skillet and stir well.
  • Return the chicken to the skillet and toss with the vegetables and sauce.
  • Then add cornstarch diluted in water to thicken the sauce.
  • Cook for another 2-3 minutes, stirring constantly, until the sauce is thick and glossy.
  • Remove from the heat and serve the Chess Chicken hot with white rice or noodles.
