Ingredients
1 cup of arborio rice
1/2 cup dry white wine
4 cups of meat broth
1 medium onion chopped
2 tablespoons of butter
1/2 cup grated parmesan cheese
1/4 cup crushed gorgonzola cheese
Directions
- In a medium pan, sauté the onion in butter until transparent.
- Add the rice and sauté for another 2 minutes.
- Pour in the white wine and cook until the wine is absorbed by the rice.
- Add 1 cup (tea) of the meat broth and cook, stirring constantly, until the broth is absorbed.
- Repeat the process, adding 1 cup of beef broth at a time, until the rice is cooked al dente, about 20 minutes.
- Remove from heat and stir in parmesan cheese and gorgonzola cheese.
- Serve immediately.
