Ingredients

  • 500g peeled and chopped cassava

  • 2 tablespoons of butter

  • 1 chopped onion

  • 2 chopped tomatoes

  • 8 cups of water

  • 4 cubes of chicken broth

  • Salt and black pepper to taste

  • 1 tablespoon chopped parsley

Directions

  • In a pan, heat the butter and sauté the onion until wilted.
  • Add the tomato and sauté for another 5 minutes.
  • Add the cassava, water, chicken stock cubes, salt and black pepper.
  • Cook over low heat, with the pan covered, for about 30 minutes, or until the cassava is soft.
  • Blend the soup in a blender until creamy.
  • Return the soup to the pan and heat until hot.
  • Serve with chopped parsley.
