Ingredients
500g peeled and chopped cassava
2 tablespoons of butter
1 chopped onion
2 chopped tomatoes
8 cups of water
4 cubes of chicken broth
Salt and black pepper to taste
1 tablespoon chopped parsley
Directions
- In a pan, heat the butter and sauté the onion until wilted.
- Add the tomato and sauté for another 5 minutes.
- Add the cassava, water, chicken stock cubes, salt and black pepper.
- Cook over low heat, with the pan covered, for about 30 minutes, or until the cassava is soft.
- Blend the soup in a blender until creamy.
- Return the soup to the pan and heat until hot.
- Serve with chopped parsley.
