Ingredients
- 500g of cassava (cassava), peeled and grated 
- 1 cup coconut milk 
- 3 eggs 
- 2 tablespoons of melted butter 
- 1/2 cup of milk 
- 2 cups of sugar 
- 1/2 teaspoon of salt 
- 1 tablespoon powdered yeast 
- Grated coconut for sprinkling (optional) 
Directions
- Preheat the oven to 180°C (350°F).
- Unite a form of cake with butter and sprinkle with wheat flour.
- In a blender or food processor, place the grated cassava, eggs, coconut milk, milk and melted butter.
- Beat until you get a very homogeneous mass.
- Transfer the mixture to a large bowl and add the sugar and salt.
- Stir well until the sugar is completely dissolved in the mass.
- Add the baking powder and mix gently until incorporated into the dough.
- Pour the batter into the prepared cake pan.
- If desired, sprinkle some shredded coconut over the dough for a special touch.
- Place the cake in the preheated oven and bake for approximately 40 to 50 minutes, or until a toothpick inserted in the center comes out clean and the cake is golden on top.
- Remove the cake from the oven and let it cool in the pan for a few minutes.
