Follow the step-by-step instructions on how to prepare your cassava cake and it will be fluffy and delicious.

Ingredients

  • 500g of cassava (cassava), peeled and grated

  • 1 cup coconut milk

  • 3 eggs

  • 2 tablespoons of melted butter

  • 1/2 cup of milk

  • 2 cups of sugar

  • 1/2 teaspoon of salt

  • 1 tablespoon powdered yeast

  • Grated coconut for sprinkling (optional)

Directions

  • Preheat the oven to 180°C (350°F).
  • Unite a form of cake with butter and sprinkle with wheat flour.
  • In a blender or food processor, place the grated cassava, eggs, coconut milk, milk and melted butter.
  • Beat until you get a very homogeneous mass.
  • Transfer the mixture to a large bowl and add the sugar and salt.
  • Stir well until the sugar is completely dissolved in the mass.
  • Add the baking powder and mix gently until incorporated into the dough.
  • Pour the batter into the prepared cake pan.
  • If desired, sprinkle some shredded coconut over the dough for a special touch.
  • Place the cake in the preheated oven and bake for approximately 40 to 50 minutes, or until a toothpick inserted in the center comes out clean and the cake is golden on top.
  • Remove the cake from the oven and let it cool in the pan for a few minutes.
  • Unmold the cassava cake and let it cool completely on a wire rack before serving.
