For your Carreteiro Rice to be very fluffy and tasty, follow the step-by-step instructions.

Ingredients

  • 2 cups of rice

  • 500g beef jerky or beef jerky

  • 2 minced garlic cloves

  • 1 large chopped onion

  • 2 tablespoons oil or olive oil

  • 3 cups of hot water

  • Salt and black pepper to taste

  • chopped parsley to finish

Directions

  • Soak beef jerky or dried meat in water for at least 12 hours, changing the water from time to time. 
    Then cut into small cubes and set aside.
  • In a large pan, heat the oil or olive oil and sauté the onion and garlic until golden.
  • Add the beef jerky or dried meat and sauté for a few minutes until lightly browned.
  • Add the rice and mix well, sautéing for a few minutes until the grains are lightly toasted.
  • Add hot water, salt and pepper to taste and mix well.
  • Reduce the heat to medium-low and cook for about 20 to 25 minutes, until the rice is tender and all the liquid has been absorbed. 
    Stir occasionally to prevent the rice from sticking to the bottom of the pan.
  • When the rice is cooked, turn off the heat and let it rest for a few minutes before serving. 
    Sprinkle with chopped parsley and serve hot.

Notes

  • This recipe makes about 4 to 6 servings and is perfect for lunch or dinner with family and friends. Enjoy!
