Carrot cake with chocolate icing

Carrot cake with chocolate icing is a traditional Brazilian sweet, which is made with carrots, eggs, oil, sugar, wheat flour, baking powder and salt. The topping is made with milk, chocolate powder, sugar and margarine.

Carrot cake is a fluffy, moist cake with a mild carrot flavor. 
The chocolate coating is creamy and tasty, and contrasts with the carrot flavor.

Ingredients

  • 3 medium carrots, peeled and grated

  • 4 eggs

  • 1 cup (tea) oil

  • 1½ cups of sugar

  • 2 cups (tea) of wheat flour

  • 1 tablespoon of baking powder

  • 1 pinch of salt

  • 1 cup of milk (tea)

  • 10 tablespoons of chocolate powder

  • 8 tablespoons of sugar

  • 2 tablespoons margarine

Directions

  • Preheat the oven to 180°C (medium temperature). 
    Grease and flour a 24 cm round cake tin.
  • In a blender, beat the carrots, eggs, oil and sugar until smooth.
  • In a bowl, sift the wheat flour, baking powder and salt. 
    Add to the beaten ingredients and mix until combined.
  • Pour the batter into the prepared pan and bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  • While the cake bakes, prepare the frosting. 
    In a pan, add the milk, chocolate powder, sugar and margarine. 
    Cook over low heat, stirring constantly, until it thickens.
  • Remove the cake from the oven and let it cool. 
    Unmold and pour the topping over the top.

Notes

  • For a moister cake, add 1/2 cup (tea) of orange juice to the dough.
  • If you want a sweeter cake, add 1/4 cup (tea) of extra sugar to the dough.
  • For a creamier frosting, add 1 tablespoon of extra butter to the frosting.
