Ingredients
2 medium carrots
3 eggs
1 cup vegetable oil
2 cups of wheat flour
2 cups of sugar
1 tablespoon powdered yeast
4 tablespoons cocoa powder
4 tablespoons of butter
6 tablespoons of sugar
6 tablespoons of milk
Directions
- Preheat the oven to 180°C.
Unite a round shape of approximately 24 cm in diameter with butter and sprinkle with wheat flour. - Peel and grate the carrots finely.
Reserve. - In a large bowl, beat the eggs with a whisk or hand mixer until well blended.
Add the oil and sugar, and continue beating until you get a homogeneous mixture. - Add the grated carrot to the dough and mix well.
- Add the sifted wheat flour and baking powder to the mixture and stir gently until you get a smooth, homogeneous dough.
- Pour the batter into the prepared tin and bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted in the center of the cake comes out clean.
- While the cake is baking, prepare the chocolate frosting.
In a pan, melt the butter over low heat.
Add the cocoa powder, sugar and milk, and stir until the mixture is smooth and creamy. - Remove from heat and set aside.
- Remove the cake from the oven and let it cool completely before unmolding.
- Turn the cake out onto a serving plate and top with the chocolate frosting, spreading it evenly over the cake.
- Wait for the frosting to harden a little before serving.
