Caldo Verde with Sausage

Ingredients
1 smoked calabresa sausage
4 large potatoes
1 big onion
2 garlic cloves
2 cups kale, cut into thin strips
4 cups vegetable broth (or water)
Olive oil to taste
Salt and pepper to taste
Directions
- Peel the potatoes and cut them into small cubes.Â
Reserve. - In a large pan, sauté the chopped onion and garlic in a little olive oil until golden.
- Add the cut potatoes to the pan and sauté for a few minutes, stirring occasionally.
- Add enough vegetable broth (or water) to cover the potatoes.
- Season with salt and pepper to taste.
- Cook over medium heat until the potatoes are soft and fall apart easily when pierced with a fork.
- This usually takes about 20 minutes.
- Meanwhile, cut the pepperoni sausage into thin slices.
- In a separate skillet, brown the sausage slices in a little olive oil until lightly crispy.Â
Reserve. - When the potatoes are cooked, use a hand mixer or a blender to puree the soup until it reaches a creamy consistency.
- If you prefer, leave some potato chunks whole for a more rustic texture.
- Add the kale cut into thin strips to the soup and cook for a few more minutes, until it is soft.
- Remove from the heat and serve the green broth very hot.
- To serve, place some pepperoni sausage slices on top of the green broth and drizzle with olive oil.
