Ingredients

  • 1 smoked calabresa sausage

  • 4 large potatoes

  • 1 big onion

  • 2 garlic cloves

  • 2 cups kale, cut into thin strips

  • 4 cups vegetable broth (or water)

  • Olive oil to taste

  • Salt and pepper to taste

Directions

  • Peel the potatoes and cut them into small cubes. 
    Reserve.
  • In a large pan, sauté the chopped onion and garlic in a little olive oil until golden.
  • Add the cut potatoes to the pan and sauté for a few minutes, stirring occasionally.
  • Add enough vegetable broth (or water) to cover the potatoes.
  • Season with salt and pepper to taste.
  • Cook over medium heat until the potatoes are soft and fall apart easily when pierced with a fork.
  • This usually takes about 20 minutes.
  • Meanwhile, cut the pepperoni sausage into thin slices.
  • In a separate skillet, brown the sausage slices in a little olive oil until lightly crispy. 
    Reserve.
  • When the potatoes are cooked, use a hand mixer or a blender to puree the soup until it reaches a creamy consistency.
  • If you prefer, leave some potato chunks whole for a more rustic texture.
  • Add the kale cut into thin strips to the soup and cook for a few more minutes, until it is soft.
  • Remove from the heat and serve the green broth very hot.
  • To serve, place some pepperoni sausage slices on top of the green broth and drizzle with olive oil.
