Ingredients

  • 2 cups of milk

  • 2 tablespoons of butter

  • 2 tablespoons wheat flour

  • Salt to taste

  • White pepper to taste

  • Nutmeg, grated to taste (optional)

Directions

  • In a pan over medium heat, melt the butter until it is completely liquid.
  • Add the wheat flour to the melted butter and stir well with a wire whisk or wooden spoon, forming a paste called a roux.
  • Cook the roux for about 1 minute, stirring constantly to prevent burning.
  • Gradually add the milk to the pan, stirring continuously to prevent lumps from forming. 
    Be sure to incorporate all of the milk before adding more.
  • Keep stirring until you get a smooth and homogeneous mixture.
  • Reduce the heat to medium-low and continue to cook the béchamel sauce, stirring regularly, until it thickens and reaches the desired consistency. 
    This usually takes about 5 to 7 minutes. 
    If the sauce seems too thick, you can add a little more milk to adjust the consistency.
  • Season the sauce with salt, white pepper and grated nutmeg to taste. 
    Remember to taste and adjust seasonings as needed.
  • Remove the béchamel sauce from the heat and let it rest for a few minutes before using it in your culinary preparations.
