These pancakes are soft, slightly sweet and full of banana and oat flavor. They’re a versatile option and can be customized with different toppings or add-ons like chopped nuts, chocolate chips, or even a tablespoon of peanut butter added to the dough for an extra kick of flavor. Enjoy!

Ingredients

  • 1 ripe banana

  • 1 egg

  • 1/2 cup rolled oats (can be traditional or gluten-free oats if you prefer)

  • 1/2 teaspoon cinnamon powder (optional)

  • Pinch of salt

  • Coconut oil or butter to grease the pan

  • Honey, maple syrup or fresh fruit for serving (optional)

Directions

  • In a bowl, mash the banana until it is well crushed.
  • Add the egg to the banana and mix well until it is homogeneous.
  • Then add the rolled oats, ground cinnamon (if using) and a pinch of salt.
  • Stir until all ingredients are well combined. The consistency of the dough should be a little thick.
  • Heat a non-stick frying pan over medium-low heat.
  • Grease the pan with a little coconut oil or butter to prevent the pancakes from sticking.
  • Pour some of the batter into the hot skillet to form a pancake of the desired size.
  • Cook for about 2-3 minutes, until bubbles start to form on the surface of the pancake and the edges start to set.
  • Using a spatula, flip the pancake and cook for another 1-2 minutes on the other side, or until golden brown.
  • Repeat the process with the remaining dough, greasing the pan as needed.
  • Serve the pancakes hot, accompanied by honey, maple syrup, fresh fruit or your favorite toppings.
