Ingredients
1 ripe banana
1 egg
1/2 cup rolled oats (can be traditional or gluten-free oats if you prefer)
1/2 teaspoon cinnamon powder (optional)
Pinch of salt
Coconut oil or butter to grease the pan
Honey, maple syrup or fresh fruit for serving (optional)
Directions
- In a bowl, mash the banana until it is well crushed.
- Add the egg to the banana and mix well until it is homogeneous.
- Then add the rolled oats, ground cinnamon (if using) and a pinch of salt.
- Stir until all ingredients are well combined. The consistency of the dough should be a little thick.
- Heat a non-stick frying pan over medium-low heat.
- Grease the pan with a little coconut oil or butter to prevent the pancakes from sticking.
- Pour some of the batter into the hot skillet to form a pancake of the desired size.
- Cook for about 2-3 minutes, until bubbles start to form on the surface of the pancake and the edges start to set.
