Baked Vegetable Pie

The roasted vegetable pie is a recipe consisting of a dish made with wheat flour dough, filled with a mixture of roasted and seasoned vegetables. Some examples of vegetables that can be used in the recipe are zucchini, tomatoes, carrots, peppers, onions and leeks.

The baked vegetable pie is an option for a vegetarian main dish or as a side dish for dinner or lunch. 
You can also add grated cheese to your vegetable mix or pie topping for added flavor.

Ingredients

  • 1 cup wheat flour

  • 1 egg

  • 3/4 cup of water

  • 1 tablespoon olive oil

  • salt to taste

  • Filling
  • 1/2 zucchini

  • 1/2 carrot

  • 1/2 red bell pepper

  • 1 tomato

  • 1 onion

  • 2 garlic cloves

  • 1 tablespoon olive oil

  • Salt and herbs to taste

Directions

  • In a container, mix the wheat flour, the egg, the water, the olive oil and the salt until it forms a homogeneous mass.
  • Let the dough rest for about 30 minutes.
  • Preheat your oven to 180°C.
  • Cut the vegetables into small cubes and season them with the oil, salt and aromatic herbs.
  • Arrange the vegetables on a baking sheet and place them in the oven for about 20 minutes, or until they are soft.
  • Meanwhile, open the dough on a lightly floured surface and forge the bottom and sides in a greased shape.
  • Remove the vegetables from the oven and arrange them over the pie crust.
  • Bake the pie for about 30 more minutes, or until the pastry is golden and crispy.
  • Remove the pie from the oven and let it cool for a few minutes before serving.
  • Serve the baked vegetable pie hot.
