Ingredients
1 cup wheat flour
1 egg
3/4 cup of water
1 tablespoon olive oil
salt to taste

1/2 zucchini
1/2 carrot
1/2 red bell pepper
1 tomato
1 onion
2 garlic cloves
1 tablespoon olive oil
Salt and herbs to taste
Directions
- In a container, mix the wheat flour, the egg, the water, the olive oil and the salt until it forms a homogeneous mass.
- Let the dough rest for about 30 minutes.
- Preheat your oven to 180°C.
- Cut the vegetables into small cubes and season them with the oil, salt and aromatic herbs.
- Arrange the vegetables on a baking sheet and place them in the oven for about 20 minutes, or until they are soft.
- Meanwhile, open the dough on a lightly floured surface and forge the bottom and sides in a greased shape.
- Remove the vegetables from the oven and arrange them over the pie crust.
- Bake the pie for about 30 more minutes, or until the pastry is golden and crispy.
- Remove the pie from the oven and let it cool for a few minutes before serving.
- Serve the baked vegetable pie hot.
