This recipe is simple to prepare and is perfect as a side dish for dinner or lunch. 
In addition, it is a vegetarian option and can be easily adapted to be vegan, simply by omitting or replacing the oil with a vegetable oil.

Ingredients

  • 4 medium potatoes

  • 2 tablespoons of olive oil

  • 1 teaspoon minced fresh rosemary

  • 1 teaspoon minced fresh thyme

  • Salt and black pepper to taste

Directions

  • Preheat the oven to 180°C.
  • Wash the potatoes and cut them into thin slices. 
    Arrange the potato slices on a baking sheet.
  • In a small bowl, combine olive oil, rosemary, thyme, salt and pepper.
  • Drizzle the herb mixture over the potato slices and mix well so the potatoes are well seasoned.
  • Place the baking sheet in the oven and bake the potatoes for about 30 minutes, or until they are soft and golden brown.
  • Remove the potatoes from the oven and serve hot.
