Eggplant is a very versatile vegetable and can be served in many ways. In the oven, it becomes soft and juicy, with a slightly sweet flavor.

Ingredients

  • 2 medium eggplants

  • 3 tablespoons of olive oil

  • 2 crushed garlic cloves

  • 1 tablespoon dried oregano

  • Salt to taste

Directions

  • Preheat the oven to 200°C.
  • Wash the eggplants and cut them into thin slices.
  • In a bowl, mix the olive oil, garlic, oregano and salt.
  • Season the eggplant slices with the olive oil mixture.
  • Place the eggplant slices on a baking sheet lined with parchment paper.
  • Bake for 30 minutes or until the eggplants are soft.

Notes

  • To prevent the eggplant from absorbing too much oil, you can bake it without seasoning it. Once baked, season it with olive oil, garlic, and oregano to taste.

    You can also add other ingredients to the eggplant in the oven, such as tomatoes, onions, cheese, or meat.
