1 tablespoon baking powder

3 large apples, peeled and chopped

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12-inch cake pan.
- In a blender, beat the eggs, oil and apple peels until smooth.
- In a large bowl, combine flour, sugar, baking powder, cinnamon, and salt.
- Add the mixture from the blender to the dry ingredients and mix until smooth.
- Add the chopped apples and mix gently.
- Pour the batter into the prepared pan and bake for 40 to 50 minutes, or until a toothpick inserted into the center comes out clean.
