Ingredients

  • 2 cups cooked and mashed sweet potatoes

  • 3 eggs

  • 1 cup vegetable oil

  • 2 cups of sugar

  • 3 cups of wheat flour

  • 1 tablespoon baking powder

  • 1 teaspoon of cinnamon powder

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon salt

  • 1 cup chopped walnuts or chestnuts (optional)

Directions

  • Preheat the oven to 180°C.
  • Grease and flour a cake pan.
  • In a large bowl, mix the mashed sweet potatoes, eggs, oil and sugar.
  • Stir well until you obtain a homogeneous mixture.
  • In another bowl, sift the wheat flour, baking powder, cinnamon, nutmeg and salt.
  • Gradually add the dry ingredients to the sweet potato mixture, stirring well to combine.
  • If desired, add chopped walnuts or chestnuts to the dough and mix.
  • Pour the batter into the prepared pan and smooth the surface.
  • Bake in the preheated oven for approximately 40-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  • Once cooled, you can sprinkle powdered sugar on top or prepare a topping of your choice.
