Here is a basic recipe to prepare a delicious bacalhoada:

Ingredients

  • 500g desalted and shredded cod

  • 1kg of potatoes, cut into medium slices

  • 2 large onions, cut into rings

  • 3 garlic cloves, chopped

  • 3 ripe tomatoes, cut into slices

  • 1 red pepper, cut into strips

  • Black olives to taste

  • Extra virgin olive oil

  • Fresh parsley and cilantro, chopped

  • Salt and pepper to taste

Directions

  • If you purchased salted cod, it is important to desalt it. To do this, leave the cod to soak in water in the refrigerator for 24 hours, changing the water at least 3 times.
  • Then, shred the cod into medium pieces.
  • Peel the potatoes and cut them into medium slices. Cook in salted water until they are almost ready, but still firm.
  • Drain and reserve.
  • In a large refractory, start assembling the bacalhoada. Place a layer of potatoes on the bottom.
  • Over the potatoes, distribute the shredded cod, onion slices, chopped garlic, tomatoes, peppers and olives.
  • Drizzle generously with extra virgin olive oil.
  • Season with salt and pepper to taste. Add chopped parsley and cilantro.
  • Repeat layers, ending with a layer of potatoes on top.
  • Drizzle again with olive oil, add more parsley and cilantro on top. Decorate with olives.
  • Bake in a preheated oven at 180°C for approximately 40-50 minutes, or until the potatoes are golden.
  • Remove from the oven and serve hot. Bacalhoada is a complete meal in itself, but it can also be accompanied by white rice.
