The vegetable pie is made with a dough of wheat flour, eggs, milk and baking powder. 
The filling can be made with any type of vegetable you like, such as carrots, onions, tomatoes, broccoli, cauliflower, spinach, etc. 
Vegetables can be sautéed, cooked or raw.

Ingredients

  • 3 eggs

  • 1/2 cup of oil

  • 1 and 1/2 cups of milk

  • 2 cups of wheat flour

  • 1 tablespoon of baking powder

  • Salt to taste

  • 2 medium carrots, grated

  • 1 medium onion, chopped

  • 2 tomatoes, chopped

  • 1 cup cooked broccoli, drained

  • 1/2 cup grated parmesan cheese

  • Salt and pepper to taste

Directions

  • Preheat the oven to 180 degrees Celsius.
  • Grease and flour a 26cm pie pan.
  • For the dough, beat the eggs, oil and milk in a blender.
  • Add the wheat flour, baking powder and salt. 
    Beat until you obtain a homogeneous mass.
  • Pour the batter into the prepared pan and set aside.
  • For the filling, sauté the onion and carrot in a pan with a drizzle of olive oil.
  • Add the tomato and broccoli and cook for a few more minutes.
  • Season with salt and pepper to taste.
  • Pour the filling over the dough and sprinkle with grated Parmesan cheese.
  • Bake for about 30 minutes, or until the pie is golden and the filling is cooked.
