Stuffed Zucchini

Stuffed zucchini is a traditional Brazilian dish that can be made with different fillings, such as ground meat, chicken, vegetables or cheese.

It is a healthy and tasty option, which can be served as a main dish or side dish.

Ingredients

  • 4 medium zucchini

  • 200 g of ground beef

  • 1 chopped onion

  • 2 cloves of garlic, chopped

  • 1 chopped tomato

  • 1/2 cup tomato sauce

  • Salt and black pepper to taste

  • 1/2 cup grated mozzarella cheese

  • Oregano to taste

Directions

  • Cut the zucchini in half, lengthwise.
  • Using a spoon, remove the zucchini pulp, leaving a border of about 1 cm.
  • Reserve the zucchini pulp.
  • In a pan, sauté the onion and garlic in olive oil.
  • Add the ground beef and sauté until golden.
  • Add the chopped tomato, tomato sauce, salt and black pepper to taste.
  • Cook over low heat for about 15 minutes, or until the sauce thickens.
  • Stuff the zucchini with the meat sauce.
  • Sprinkle with mozzarella cheese and oregano.
  • Bake in a preheated oven at 200°C for about 20 minutes, or until the cheese melts and turns golden.
