Polvilho Baked Biscuit

Roasted tapioca biscuit is a traditional biscuit from Brazilian cuisine. It is made with sour tapioca starch, boiling water, oil and eggs. The result is a cookie that is crunchy on the outside and soft on the inside, with a delicious flavor.

Ingredients

  • 500 g of sour cassava starch

  • 200 ml of boiling water

  • 150 ml oil at room temperature

  • 5 eggs

  • salt to taste

Directions

  • In a bowl, mix the tapioca starch and salt.
  • Add the boiling water and mix well until a homogeneous dough forms.
  • Add the oil and eggs, one by one, mixing well after each addition.
  • Place the dough in a piping bag and shape the cookies on a greased or baking tray lined with baking paper.
  • Bake in a preheated oven at 200°C for about 20 minutes, or until golden.
