Chickpea salad can be dressed with a variety of ingredients, such as olive oil, vinegar, parsley, onion, tomato, pepper, garlic, mint, etc.

Ingredients

  • 1 cup cooked and drained chickpeas

  • 1/2 chopped red onion

  • 1 chopped tomato

  • 1/4 cup (tea) olive oil

  • 1/4 cup white wine vinegar

  • 1/4 cup chopped parsley

  • Salt and pepper to taste

Directions

  • In a large bowl, mix the chickpeas, onion, tomato, olive oil, vinegar, parsley, salt and pepper.
  • Mix well and refrigerate for at least 30 minutes before serving.
