Sweet corn cake with guava paste

Cornmeal cake with guava paste is a versatile sweet that can be served as a dessert, snack or breakfast. 
It can be consumed hot or cold, and is a great option to accompany coffee or tea.

Ingredients

  • 1 cup cornmeal (tea)

  • 1 cup (tea) wheat flour

  • 1 cup (tea) sugar

  • 1/2 cup (tea) of oil

  • 1 egg

  • 1 cup of milk (tea)

  • 1 tablespoon of chemical baking powder

  • 100 g of guava paste in pieces

Directions

  • Preheat the oven to 180ºC.
  • Grease and flour a cake pan.
  • In a blender, beat the cornmeal, wheat flour, sugar, oil, egg and milk until you obtain a homogeneous mixture.
  • Add the chemical yeast and mix gently.
  • Pour the dough into the prepared pan and distribute the guava paste over the top.
  • Bake for about 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Notes

  • For a fluffier cake, use fine cornmeal.
  • If you prefer a sweeter cake, add more sugar.
  • For a cake with more guava, add more guava to the dough.
