Fried Tapioca Biscuit

Fried starch biscuit is a traditional snack from Brazilian cuisine, especially from the south and southeast of the country. It is made with sour cassava starch, water, oil and salt, and is fried in hot oil.

The biscuit has a slightly acidic flavor, is crunchy on the outside and soft on the inside.

Ingredients

  • 500 g of sour cassava starch

  • 100 ml soybean oil

  • 300 ml of water

  • 1 tablespoon of salt

  • 2 beaten eggs

Directions

  • In a pan, heat the oil and water until it boils.
  • In a bowl, mix the tapioca starch and salt.
  • Pour the hot oil and water mixture over the tapioca starch and mix well until a homogeneous dough forms.
  • Add the beaten eggs and mix until incorporated.
  • Heat the oil in a pan or frying pan over medium heat.
  • Using your hands, shape the dough into balls or discs and fry in batches until golden.
  • Drain excess oil on paper towel and serve.

Notes

  • To prevent the biscuit from exploding when frying, it is important that the oil is hot, but not boiling.
  • If you want a crispier cookie, let it fry longer.
  • You can add other ingredients to the dough, such as cheese, oregano or parsley.
