Belgian cream is a pastry cream made with milk, condensed milk, cornstarch and egg yolks. It is a versatile cream that can be used in cakes, pies, puddings and other desserts.

Ingredients

  • 1 can of condensed milk (395 g)

  • 2 cups whole milk (500 ml)

  • 2 tablespoons of corn starch

  • 3 egg yolks

  • 1 teaspoon vanilla essence

Directions

  • In a pan, mix condensed milk, milk, cornstarch and egg yolks. 
    Cook over medium heat, stirring constantly, until thickened.
  • Turn off the heat and add the vanilla essence.
  • Let it cool and use it in your favorite recipes.

Notes

  • To prevent the cream from forming lumps, always stir with a wire whisk or a wooden spoon.
  • If you want a more consistent cream, add more cornstarch.
  • For a more flavored cream, add a little lemon or orange zest.
