Ingredients
1 tablespoon of butter
1 chopped onion
2 silver bananas, sliced
1 cup cassava flour
1/2 cup of sugar
1/4 cup chopped cashew nuts
salt to taste
Directions
- In a large skillet, melt the butter over medium heat.
- Add the onion and sauté until soft, about 5 minutes.
- Add the bananas and cook for another 2 minutes.
- Add the cassava flour, sugar, cashew nuts and salt.
- Stir well to combine.
- Cook for another 2 minutes, stirring constantly, until the farofa is golden.
- Remove from heat and serve hot.
Notes
- You can also use small bananas or plantains in this recipe.
- For a more intense flavor, add a pinch of cinnamon or cloves to the farofa.
