Ingredients

  • 3 eggs

  • 3 medium carrots, peeled and chopped

  • 1 cup vegetable oil

  • 2 cups of wheat flour

  • 2 cups of sugar

  • 1 tablespoon powdered yeast

  • 4 tablespoons of chocolate powder

  • 4 tablespoons of sugar

  • 4 tablespoons of milk

  • 2 tablespoons of butter

Directions

  • Preheat the oven to 180°C and grease a round cake tin with butter and flour, or line it with parchment paper.
  • In the blender, place the chopped carrots, eggs and oil.
  • Mix until you get a smooth mixture.
  • In a large bowl, mix the sugar and sifted wheat flour.
  • Add the carrot mixture from the blender to the bowl with the dry ingredients and stir until the dough is well incorporated.
  • Add the baking powder and stir gently.
  • Pour the batter into the prepared tin and bake for about 30-40 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  • While the cake is baking, prepare the chocolate icing: in a saucepan, mix the sugar, cocoa powder, butter and milk.
  • Cook over medium heat, stirring constantly, until the mixture boils and thickens slightly. 
    Remove from fire.
  • After removing the cake from the oven and letting it cool down a bit, unmold it and place the chocolate frosting on top.
  • Let the cake cool completely before serving.
  • Cut into pieces and enjoy!
