Ingredients
3 eggs
3 medium carrots, peeled and chopped
1 cup vegetable oil
2 cups of wheat flour
2 cups of sugar
1 tablespoon powdered yeast
4 tablespoons of chocolate powder
4 tablespoons of sugar
4 tablespoons of milk
2 tablespoons of butter
Directions
- Preheat the oven to 180°C and grease a round cake tin with butter and flour, or line it with parchment paper.
- In the blender, place the chopped carrots, eggs and oil.
- Mix until you get a smooth mixture.
- In a large bowl, mix the sugar and sifted wheat flour.
- Add the carrot mixture from the blender to the bowl with the dry ingredients and stir until the dough is well incorporated.
- Add the baking powder and stir gently.
- Pour the batter into the prepared tin and bake for about 30-40 minutes, or until a toothpick inserted in the center of the cake comes out clean.
- While the cake is baking, prepare the chocolate icing: in a saucepan, mix the sugar, cocoa powder, butter and milk.
- Cook over medium heat, stirring constantly, until the mixture boils and thickens slightly.Â
Remove from fire. - After removing the cake from the oven and letting it cool down a bit, unmold it and place the chocolate frosting on top.
- Let the cake cool completely before serving.
- Cut into pieces and enjoy!
