To prepare your Moroccan Couscous you can use the ingredients listed below. 
Follow the instructions to get it right!

Ingredients

  • 1 cup Moroccan couscous

  • 1 cup boiling water

  • 1 tablespoon olive oil

  • 1/2 chopped onion

  • 2 minced garlic cloves

  • 1/2 cup grated carrot

  • 1/2 cup frozen peas

  • 1/2 cup chopped tomato

  • 1/4 cup chopped parsley

  • 1/4 cup lemon juice

  • 1/4 teaspoon of salt

  • 1/8 teaspoon black pepper

Directions

  • In a large bowl, combine couscous and boiling water.
  • Cover the bowl with plastic wrap and let it rest for 5 minutes, or until the couscous absorbs all the water.
  • Meanwhile, heat the oil in a pan over medium heat.
  • Add the onion and garlic and sauté for 2-3 minutes, or until soft.
  • Add the carrots, peas, tomatoes, parsley, lemon juice, salt and black pepper and mix well.
  • Drain the couscous and add it to the pan.
  • Mix well to combine.
  • Serve it hot.

Notes

  • You can also cook couscous in the oven. To do this, preheat the oven to 180 degrees Celsius. Place the couscous in a roasting pan and pour over the boiling water. Cover the baking sheet with aluminum foil and bake for 15 minutes, or until the couscous is tender.
  • You can add other ingredients to Moroccan couscous, such as meat, chicken, fish or seafood.
  • Moroccan couscous can also be served as an accompaniment to other dishes, such as meat, poultry or fish.
