Ingredients

  • 250g of pasta (penne, screw, tie, etc.)

  • 1 cup of mayonnaise

  • 1/4 cup sour cream (optional, to make it creamier)

  • 1 large grated carrot

  • 1/2 small red onion, chopped

  • 1/2 red bell pepper, chopped

  • 1/2 yellow bell pepper, chopped

  • 1/2 cup black or green olives, sliced

  • Parsley or green onions to taste, chopped

  • Salt and pepper to taste

Directions

  • Cook the pasta: In a large pot, bring water to a boil and add a pinch of salt.
  • Cook the pasta according to package directions until al dente. 
    Run and book.
  • Preparing the vegetables: While the pasta is cooking, chop the carrots, onions, peppers, olives and fresh herbs.
  • Preparing the sauce: In a large bowl, combine the mayonnaise, sour cream (if using), and chopped vegetables.
  • Mix well until all ingredients are combined.
  • Combining the ingredients: Add the cooked pasta to the bowl with the sauce and vegetables.
  • Mix carefully so that the sauce envelops all the pasta and the ingredients are evenly distributed.
  • Season: Season the macaroni with salt and pepper to taste. 
    Remember to taste and adjust seasonings as needed.
  • Chill: Cover bowl with plastic wrap or transfer macaroni to a container with a lid.
  • Chill in the fridge for at least 1 hour before serving to allow the flavors to meld and the macaroni to chill.
  • Serve: Remove the macaroni from the fridge and serve as a side dish with your meals. 
    It can be served as a starter, barbecue side dish or a light main course.
