Ingredients
3 eggs
2 cups of wheat flour
2 cups of sugar
1 cup of milk
1 tablespoon powdered yeast
1 can of condensed milk
1 can of coconut milk
1 cup desiccated coconut (fresh or desiccated)
1 cup desiccated coconut (fresh or desiccated)
whipped cream (optional)
Directions
- Preheat the oven to 180°C.
- In a bowl, beat the eggs and sugar until you get a fluffy and clear cream.
- Add the wheat flour and milk alternately, starting and ending with the flour.
- Mix until you get a homogeneous mass.
- Add the baking powder and mix gently.
- Pour the dough into a rectangular or square shape, previously greased and floured.
- Bake in the preheated oven for about 30-40 minutes, or until the cake is golden brown and a toothpick inserted in the center comes out clean.
- Remove the cake from the oven and let it cool slightly before unmolding.
- In a bowl, mix condensed milk, coconut milk and grated coconut.
- Mix well until you get a homogeneous syrup.
- With the cake already unmolded and still warm, poke holes in the surface of the cake with a fork.
- Pour the syrup over the cake, making sure it is absorbed by the holes.
- Sprinkle grated coconut over the syrup, pressing lightly to adhere.
- Let the cake cool completely.
- After the cake has cooled, top it with whipped cream, if desired.
- Place the cake in the refrigerator for a few hours or until it is well chilled.
