For your Ice Cream Cake to be perfect, use the ingredients below and follow the step-by-step preparation method.

Ingredients

  • 3 eggs

  • 2 cups of wheat flour

  • 2 cups of sugar

  • 1 cup of milk

  • 1 tablespoon powdered yeast

  • 1 can of condensed milk

  • 1 can of coconut milk

  • 1 cup desiccated coconut (fresh or desiccated)

  • 1 cup desiccated coconut (fresh or desiccated)

  • whipped cream (optional)

Directions

  • Preheat the oven to 180°C.
  • In a bowl, beat the eggs and sugar until you get a fluffy and clear cream.
  • Add the wheat flour and milk alternately, starting and ending with the flour.
  • Mix until you get a homogeneous mass.
  • Add the baking powder and mix gently.
  • Pour the dough into a rectangular or square shape, previously greased and floured.
  • Bake in the preheated oven for about 30-40 minutes, or until the cake is golden brown and a toothpick inserted in the center comes out clean.
  • Remove the cake from the oven and let it cool slightly before unmolding.
  • In a bowl, mix condensed milk, coconut milk and grated coconut.
  • Mix well until you get a homogeneous syrup.
  • With the cake already unmolded and still warm, poke holes in the surface of the cake with a fork.
  • Pour the syrup over the cake, making sure it is absorbed by the holes.
  • Sprinkle grated coconut over the syrup, pressing lightly to adhere.
  • Let the cake cool completely.
  • After the cake has cooled, top it with whipped cream, if desired.
  • Place the cake in the refrigerator for a few hours or until it is well chilled.
