Let’s make a tasty and creamy Vatapá with this simple and easy recipe, see the ingredients and the step-by-step:

Ingredients

  • 500ml of coconut milk

  • 500g dried shrimp

  • 1 cup roasted and skinless peanuts

  • 3 tablespoons of palm oil

  • 1 medium chopped onion

  • 2 minced garlic cloves

  • 2 stale French breads

  • 1 tea cup of water

  • 1 tablespoon olive oil

  • 1 tablespoon grated ginger

  • 1 chopped yellow pepper

  • 1 chopped red pepper

  • 1 chopped seedless tomato

  • Chopped cilantro or parsley to taste

  • Salt to taste

Directions

  • Start by soaking the dried shrimp in water for a few hours, or according to package directions. 
    Run and book.
  • In the blender, put the coconut milk and the toasted peanuts, beat until you get a homogeneous mixture. 
    Reserve.
  • In a large pan, heat the palm oil over medium heat.
  • Add the chopped onion and garlic and sauté until golden.
  • Meanwhile, cut the buns into pieces and place them in a bowl with 1 cup of water.
  • Let the bread soften in the water.
  • Add the dried shrimp to the stew in the pan and continue to cook for a few minutes until they are tender.
  • Add the coconut milk and peanut mixture to the shrimp sauce in the pan.
  • Stir well to incorporate all ingredients.
  • Then squeeze the softened bread to remove excess water and add it to the pan with the vatapá.
  • Add the olive oil, grated ginger, chopped peppers and chopped tomatoes. 
    Season with salt to taste.
  • Cook over low heat for about 15 to 20 minutes, stirring occasionally so it doesn’t stick to the bottom of the pan.
  • When the vatapá reaches a creamy and thick consistency, it’s ready! 
    Finish with chopped cilantro or parsley on top.
