Ingredients
2 medium oranges (preferably organic)
3 eggs
1 cup of sugar
1/2 cup of orange juice (you can use the juice from the oranges you used the peel)
1/2 cup vegetable oil (can be sunflower or canola oil)
2 cups of wheat flour
1 tablespoon powdered yeast
Directions
- Preheat the oven to 180°C (350°F).
- Grease a round mold of approximately 22 cm in diameter with butter and sprinkle with flour to prevent the cake from sticking.
- Wash the oranges well to remove any dirt and impurities.
- Cut off the ends and cut the oranges into small pieces.
- Remove the seeds, if any, but keep the skin.
- In a blender, add the sliced ​​oranges, eggs, sugar, oil and orange juice.
- Beat everything until you get a homogeneous mixture.
- In a large bowl, sift the flour and baking powder.
- Pour the blender mixture over the sifted dry ingredients.
- Mix gently with a spatula or silicone spoon until the dough is uniform and free of lumps.
- Pour the dough into the greased mold and place in the preheated oven.
- Bake the cake for approximately 40-50 minutes or until a toothpick inserted in the center comes out clean.
- Remove the cake from the oven and let it cool in the tin for a few minutes before unmolding.
- If desired, sprinkle icing sugar on top to decorate.
