Ingredients
1 cup dry red wine (preferably a quality wine as it will influence the flavor of the sauce)
1/2 cup beef broth (can be homemade or concentrated beef broth dissolved in water)
1/2 cup sliced mushrooms (fresh or canned)
1 tbsp flour (optional, to thicken the sauce)
2 tablespoons unsalted butter
Salt and pepper to taste
Directions
- In a skillet or large pot, melt 1 tablespoon butter over medium heat.
- Add the sliced mushrooms to the skillet and cook until they are soft and golden.
- Remove the mushrooms from the skillet and set aside.
- In the same skillet, pour the red wine and bring to a boil over medium-high heat.
- Let the wine cook for a few minutes to reduce and concentrate the flavors.
- Add the beef broth to the skillet and continue to cook for a few more minutes, stirring occasionally.
- If you want a thicker sauce, you can add 1 tablespoon all-purpose flour to the remaining 1 tablespoon butter in a small bowl.
- Mix well to form a paste.
Add the butter and flour paste to the skillet with the wine and broth, stirring quickly to avoid lumps.
Cook for a few more minutes until the sauce thickens. - Add the browned mushrooms back to the skillet and toss them into the sauce.
- Season the Madeira sauce with salt and pepper to taste.
- Cook the sauce for a few more minutes to incorporate all the flavors.
