Ingredients

  • 2 cups of fresh cream

  • 1 kg of potatoes (preferably firmer potatoes such as English or Asterix potatoes)

  • 1 cup of milk

  • 2 cups grated gruyere or emmental cheese (or any cheese you like that melts well)

  • 2 minced garlic cloves

  • 2 tablespoons of butter

  • Salt and pepper to taste

  • Grated nutmeg (optional, but adds a special flavor)

Directions

  • Preheat the oven to 200°C.
  • Peel the potatoes and cut them into thin slices (about 3-4 mm thick).
  • You can use a mandoline or a vegetable slicer to make sure the slices are even.
  • In a saucepan, heat the fresh cream, milk and chopped garlic over medium heat.
  • Season with salt, pepper and nutmeg to taste.
  • Let it boil for a few minutes, stirring occasionally.
  • Remove from heat and set aside.
  • In a refractory greased with butter, make a layer of sliced ​​potatoes, cover with part of the grated cheese and pour a portion of the seasoned cream on top.
  • Repeat the process, making alternating layers of potatoes, cheese and cream, until all ingredients are used.
  • The last layer should be cheese.
  • Cover the shape with aluminum paper and take it to the preheated oven for approximately 30 to 40 minutes.
  • After that time, remove the foil to allow the surface to brown and brown.
  • Return to the oven for another 15 to 20 minutes, or until the potato is tender and the top is golden brown and crispy.
  • Remove the gratin potato from the oven and let it rest for a few minutes before serving, so that the cream takes consistency.
